Coffee
This coffee comes from a region at the Southern end of the Andes Mountains. In an area ecologically known as a “humid sub-tropic forest” and at elevations of 4,000- 6,000 feet, 41 small farms produce this coffee. The terrain is steep and rugged, the forest lush and beautiful and dominated by mahogany trees. Known as colonials, these farmers in 1991 reacquired land taken from them by large wealthy landowners in the 1950’s. Now independent and possessing title to their own land, the farmers has the freedom and motivation to pursue efficient, productive, and agriculturally sound farming practices.
The results are positive. The coffee comes from old cultivars: Typica and Bourbon. The cherries are handpicked during three harvest periods and only when fully mature. This medium to large bean produces a full and heavy bodied brew with a mild acidity, good balance, and slightly spicy taste. Enjoy this unique coffee. Medium roast.
